PIIMM: Skip the Vodka Pasta

I hate vodka, so I avoided this recipe for a while. Then a simple swap made this dish moreish. I try not to make it often so I don't get bored of it. The leftovers are great to store in the fridge, too. Put It In My Mouth recipe for a chilly November: Thick & Creamy Skip the Vodka Pasta.

Rigatoni pasta in tomato sauce with cheese and bread in a white bowl

Skip the Vodka Pasta
This rich, creamy tomato pasta gets its depth from a splash of malbec in the sauce, and its relatively simple and quick to make. Please enjoy this dish any day of the week, for lunch or dinner. suitable for a weeknight dinner as for a slow evening in.

Ingredients
1/3 cup olive oil
1 medium shallot, finely chopped
2-3 cloves garlic, grated
1 tube of 200g tomato paste
A few splashes of malbec or merlot
1 cup heavy cream
2-3 tsp crushed red pepper flakes
300g pasta - I like rigatoni and mafalda
20g unsalted butter
30g fresh parmesan
1-2 basil springs

Steps
1. Heat olive oil in a large pan or dutch oven over medium heat. Add shallot, grated garlic, and crushed red pepper. Cook and sweat until fragrant 3-4 minutes (do not brown).
2. Add tomato paste, season with salt and pepper, and cook until dark red and caramelised, about 5 minutes.
3. Add splashes of red wine to deglaze the pot and cook for 1-2 minutes. Add cream and mix to combine.
4. Salt pasta water and cook pasta to al dente. Immediately add to sauce.
5. Add some pasta water, parmesan, butter and fresh basil and mix, then turn off the heat after a minute.
Serve immediately with more parmesan and enjoy!

Notes
If a lighter cream is needed, feel free to go for a half fat alternative.
If you'd prefer to skip alcohol, 50ml of water with a squeeze of lemon juice, and the pasta will still taste good.

Storage
Keep leftovers in an airtight container in the fridge for up to 2 days. Reheat gently in a pan with a splash of milk or water.

Drink pairing
Prosecco or Nozecco, or My favourite: sparkling water with a squeeze of fresh lime.

Enjoy!
